Some recipes earn a permanent spot in your rotation not because they’re fancy, but because they solve a problem beautifully. These buns are exactly that. Three ingredients: eggs, whole milk powder, and baking powder, and about 20 minutes stand between you and a batch of golden, satisfying buns that hold up to everything from a loaded burger to a fried egg at breakfast.

If you’ve been skeptical of flourless baking, this is the recipe that might change your mind. There’s no almond flour, no psyllium husk, no list of specialty items. The whole milk powder brings a subtle dairy richness and a surprisingly bread-like texture, while the eggs provide structure and that gorgeous golden exterior.

The technique is refreshingly no-fuss.

Mix everything together, scoop using an oiled measuring cup (I use avocado oil spray) (the ⅓-cup size gives you a perfect bun portion), place on a parchment-lined baking sheet, and shape with a spatula. A sesame seed topping or bagel seasoning takes them from simple to something you’d actually be proud to serve. Bake until golden, and resist the urge to pull them early – 13 minutes is the minimum, but 15–17 is usually the sweet spot for us.

They’re wonderful warm from the oven, and hold their texture well as they cool. Split one open and you’ll find a soft, pillowy interior – sturdy enough for a juicy burger patty, light enough to not weigh you down.

Ingredients
  

  • 6 eggs
  • 300 g whole milk milk powder around 2c + 2tbsp
  • 2 tsp baking powder
  • Topping of choice sesame seeds or everything but the bagel seasoning

Method
 

  1. Preheat the Oven to 350°F (180°C)
  2. Mix the eggs, powdered milk, and baking powder.
  3. Mix until combined
  4. Spray a 1/3 c measuring cup with avocado oil and scoop the mixture onto a parchment lined baking sheet
  5. Shape into round buns by smoothing the top with a spatula and top with sesame seeds (burger-style) or topping of choice.
  6. Bake for 13-19min. Until tops are golden
