High Protein Cottage Cheese Cucumber Salad

It is my current hyper-fixation snack.

I’ve lost over 40lbs in the last year (NATURALLY) and this snack has been one of my favorite creations!

If you love a good crunch, a vinegar tang, a savory blast, and a little spicy zing THIS IS THE SNACK FOR YOU.

Lower cals, has a good amount of protein from the cottage cheese. It’s just SOOOO GOOD.

Cottage Cheese Cucumber Salad

If you love a good crunch, a vinegar tang, a savory blast, and a little spicy zing THIS IS THE SNACK FOR YOU. Lower cals, has a good amount of protein from the cottage cheese. It’s just SOOOO GOOD.
Prep Time 9 minutes
Course: Snack
Cuisine: High Protein

Ingredients
  

  • 1 cucumber sliced
  • 4 tbsp Cottage cheese
  • 1/2 tbsp Sesame oil
  • 1/2 tbsp White wine or rice wine vinegar both are delicious!
  • 1 Sprinkle Everything but the bagel seasoning from @traderjoes
  • 1 Sprinkle Crispy jalapeño pieces from Trader Joe’s

Method
 

  1. Slice the cucumber
  2. Add to a bowl
  3. Add cottage cheese (as much as you would like!)
  4. Drizzle on sesame oil
  5. Drizzle on white wine or rice wine vinegar (both are delicious!)
  6. Sprinkle on everything but the bagel seasoning from Trader Joe's
  7. Give it all a stir
  8. Top with crispy jalapeño pieces from Trader Joe’s
  9. Adjust anything to taste
  10. ENJOYYYYY!!
