Elderberry Gummies

These homemade elderberry gummies are made with just three ingredients — elderberry syrup, grass-fed beef gelatin, and a natural sweetener — and come together in under 10 minutes of active time. The gelatin blooms in the syrup, gets gently warmed until dissolved, sweetened to taste, then poured into silicone molds and chilled until set. The result is a chewy, immune-supporting gummy with no refined sugar, no artificial ingredients, and the added benefit of gut-nourishing collagen amino acids from grass-fed gelatin. Store in the fridge for up to two weeks.

Ingredients
  

  • 1 cup homemade elderberry syrup
  • 2 tbsp grass-fed beef gelatin powder
  • Sweetener to taste — raw honey or pure maple syrup

Method
 

  1. Sprinkle gelatin over syrup in saucepan. Do not stir. Bloom 2–3 minutes.
  2. Warm over low heat, whisking until gelatin fully dissolves. Do not boil.
  3. Remove from heat. Add sweetener to taste — add more than you think, gummies set less sweet.
  4. Fill silicone molds promptly using a dropper or small cup.
  5. Refrigerate 2+ hours until completely firm.
  6. Unmold and store in airtight container in the fridge up to 2 weeks.

Notes

Must be kept refrigerated.
Not shelf-stable.
Not recommended for infants under 12 months if using honey.
